Dopo la svinatura mosto ottenuto viene chiarificato per decantazione statica a freddo e la frazione pulita viene inoculata con i lieviti selezionati. Le fermentazione \u00e8 condotta alla temperatura di 14\u00b0 per 14 giorni circa.
